Butternut Squash and Chicken Sausage Pasta
My family LOVES this squash and chicken sausage pasta.
The butternut Squash makes for a deliciously creamy pasta sauce that’s as luscious as it is flavorful.
Plus is easy to throw together and can be made ahead of time!
Butternut Squash Rigatoni with Chicken Sausage

This butternut squash makes for a deliciously creamy pasta sauce that's as luscious as it is flavorful.
Ingredients
- 1/2 a large roasted butternut squash
- 4 tbsp oil (divided)
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Squeeze of honey
- 1 large onion
- 2 shallots
- 3 cloves of garlic
- 6 sprigs of thyme
- 1 cup heavy cream
- 16 oz chicken sausage (sweet italian kale)
- 1 box rigatoni
Instructions
- Preheat oven to 425 degrees. Cut squash in half and remove seeds. Season the inside with 1 tbsp oil, salt, garlic powder, onion powder, paprika, and honey. Rub well. Roast for 40 minutes.
- Heat oil in a large pot over medium high heat.
- Add in your diced onions and shallot, grate in garlic and add thyme. Begin to cook. Season lightly with salt.
- Once the onions are translucent, remove sage leaves and add the mixture to a blender. Scoop in your roasted butternut squash and add in your cream. Blend until smooth.
- Add 1 tbsp oil to your pan and cook your sausage until browned.
- Return your squash sauce to your large pot and stir to combine.
- Once pasta is ready, add it to your sauce and stir well.
- Serve and enjoy! Add a little bit of pepper flakes for an added kick!
