I love to top these meatballs with some ricotta cheese, a little parmesan, and lemon zest for brightness!

Ingredients

  • 1 lb ground chuck (80/20)
  • 1lb ground sweet italian sausage
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried italian seasoning
  • 2 eggs
  • 1/3 cup grated parmesan cheese
  • 1/4 cup ricotta cheese
  • 1/2 cup minced yellow onion (about 1/2 a medium onion)
  • 1 cup seasoned bread crumbs
  • 1/2 cup whole milk
  • Your favorite tomato sauce for simmering and serving!

Instructions

  1. Preheat oven to 425 degrees, line a large baking sheet with parchment paper.
  2. In a large bowl combine beef, sausage, seasonings, eggs, parmesan, ricotta, onion, breadcrumbs, and milk. Using your hands, mix until well combined.
  3. Form your meat mixture into about 2 tbsp sized balls, this recipe makes 35 meatballs OR 18 large meatballs if thats what you prefer.
  4. Place your meatballs onto your parchment lined baking sheet in even rows.
  5. Remove your meatballs from the oven and place into a pot or a slow cooker filled with your favorite sauce.
  6. Serve over pasta or on their own.
